Pumpkin Recipes

What's your favorite pumpkin recipe? Here are a couple to get you started.

Pumpkin Bread

5 eggs
1 1/2 cup oil
1 can (15 oz) pumpkin
2 cups flour
2 cups sugar
2 packages (3 oz each) cook-and-serve vanilla pudding mix
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

Mix wet ingredients, then add dry.
Pour batter into five greased 5"x2 1/2"x2" loaf pans.
Bake at 325 for 50-55 minutes or until
a toothpick comes out clean.
Cook for 10 minutes, then remove from pans.
Bread may also be baked in two greased 8"x4"x2"
pans for 75-80 minutes.

Pumpkin Cookies

1/2 cup shortening
1 1/4 cup brown sugar
2 eggs
1 tsp. vanilla
1 1/2 cup canned pumpkin
2 1/2 cup flour (not packed)
4 tsp. baking powder
1/2 tsp salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 cups mini chocolate chips

Mix all ingredients together and bake at 375 for about 15 minutes.
Makes 5 dozen.

I have a really, really good pumpkin bread recipe that is a little bit different from yours. It also has chocolate chips in it that make is irresistible. It is so yummy!!
